When following a keto diet, some people may find it difficult to work out the right foods to eat and when to eat them. Meal plans can help people get used to the diet or stick with it.

Transitioning to the keto diet can be difficult. Just like with any major dietary change, it will take time for you to adjust to the changes that the keto transition requires.

Fortunately, with the right information and strategies, you can make the overwhelming task of achieving your keto goals into a simple step-by-step process.

Ketosis is a natural process that our body triggers to aid survival during times of low food intake. In this state, ketones are generated as by products from the breakdown of fats in the liver.

The end goal of a properly maintained keto diet is to force your body into this metabolic state. We don’t do this through starvation of calories but starvation of carbohydrates.

In the keto diet, the majority of daily calories come from fats, while lesser amounts come from proteins. Meat, fish, eggs, and dairy feature heavily in the keto diet.

According to a 2012 study, a keto diet may reduce fat mass, waist circumference, and fasting insulin levels. Keto diets are considered to be diabetic friendly and promotes health in other areas  including heart disease, high blood pressure, low-density lipoprotein cholesterol, and triglycerides. While I will not go in specifics about how to set up a full dietary plan based on Keto, I will introduce you to an enchanting recipe.

  2. Sauté the Aromatics: Press the saute button on the Instant Pot, melt the grass-fed unsalted butter.  Add the minced garlic and chopped onion.  Sauté until they turn fragrant and the onion becomes translucent. add a pinch of salt and pepper.
  3. Add the Mushrooms: Add the diced mushrooms to the pot. Allow them to cook for a few minutes until they soften and release their flavorful juices.

    Sprigs of Thyme
  5. Create the Soup Base: Pour in chicken broth. Let the ingredients cook as the flavors intermingle.
  6. Simmer to Perfection: Allow the soup to cook for about 15-20 minutes.
  7. Season to Taste: This is where you bring your personal touch. Add salt and pepper according to your preference. Remember that the flavors will intensify as the soup simmers, so go easy and adjust as needed.
  8. Blend or Not to Blend: Depending on your preference, you can either leave the soup as is with chunky mushroom bits or use an immersion blender to create a smoother texture. The choice is yours! You can use a blender one batch at a time covering the top with paper towel.  However, be careful not to over-fill the blender this soup is hot. I used my immersion blender to make it thicker then add the reserved sliced mushroom and let it simmer.
  9. Create the Creamy Base: Add the heavy whipping cream and wait until the soup thicken slightly.
  10. Serve and Enjoy: Ladle the creamy keto Cream of Mushroom Soup into bowls. Garnish with a sprig of thyme if you’d like. Pair it with some keto-friendly bread or air fried pork chop, or enjoy it on its own. The wholesome flavors are sure to satisfy your taste buds.
