It’s made from scratch and packed with good stuff that’ll warm you up inside and out.

In the keto diet, the majority of daily calories come from fats, while lesser amounts come from proteins. Meat, fish, eggs, and dairy feature heavily in the keto diet.
According to a 2012 study, a keto diet may reduce fat mass, waist circumference, and fasting insulin levels. Keto diets are considered to be diabetic friendly and promotes health in other areas including heart disease, high blood pressure, low-density lipoprotein cholesterol, and triglycerides. While I will not go in specifics about how to set up a full dietary plan based on Keto, I will introduce you to an enchanting recipe.

Imagine a creamy blend of mushrooms in a rich broth – it’s like a hug in a bowl. This recipe is your partner on your keto journey, giving you tasty comfort without messing with your diet.

Instructions:
- Prepare the Mushrooms: Start by cleaning and dicing your white and baby Bella mushrooms. I also saved and set aside sliced mushroom for later use.
- Sauté the Aromatics: Press the saute button on the Instant Pot, melt the grass-fed unsalted butter. Add the minced garlic and chopped onion. Sauté until they turn fragrant and the onion becomes translucent. add a pinch of salt and pepper.
- Add the Mushrooms: Add the diced mushrooms to the pot. Allow them to cook for a few minutes until they soften and release their flavorful juices.
- Infuse the Flavors: Toss in a few sprigs of thyme to infuse the mixture with a delightful herbal aroma. I love thyme so I picked those small leaves and put it in the soup too.
- Create the Soup Base: Pour in chicken broth. Let the ingredients cook as the flavors intermingle.
- Simmer to Perfection: Allow the soup to cook for about 15-20 minutes.
- Season to Taste: This is where you bring your personal touch. Add salt and pepper according to your preference. Remember that the flavors will intensify as the soup simmers, so go easy and adjust as needed.
- Blend or Not to Blend: Depending on your preference, you can either leave the soup as is with chunky mushroom bits or use an immersion blender to create a smoother texture. The choice is yours! You can use a blender one batch at a time covering the top with paper towel. However, be careful not to over-fill the blender this soup is hot. I used my immersion blender to make it thicker then add the reserved sliced mushroom and let it simmer.
- Create the Creamy Base: Add the heavy whipping cream and wait until the soup thicken slightly.
- Serve and Enjoy: Ladle the creamy keto Cream of Mushroom Soup into bowls. Garnish with a sprig of thyme if you’d like. Pair it with some keto-friendly bread or air fried pork chop, or enjoy it on its own. The wholesome flavors are sure to satisfy your taste buds.

Instant Pot Keto Cream of Mushroom Soup Recipe
Ingredients:
- 2 tablespoons white mushrooms, diced
- 2 tablespoons baby bella mushrooms, diced
- 2 cups less or no sodium organic chicken or vegetable broth
- 1 tablespoon grass-fed unsalted butter
- 1 cup heavy whipping cream
- 3 cloves garlic, minced
- 1 onion, finely chopped
- Sprigs of thyme
- Himalayan Salt and pepper to taste

- In a large pot over medium heat, melt the grass-fed unsalted butter. Add the minced garlic and chopped onion. Sauté until they turn fragrant and the onion becomes translucent.
- Add the diced mushrooms to the pot. Allow them to cook for a few minutes until they soften and release their flavorful juices.
- Toss in a few sprigs of thyme or pick the leaves of thyme.
- Pour in chicken broth. Let the ingredients cook as the flavors intermingle. Allow the soup to cook for about 15-20 minutes.
- Add salt and pepper according to your preference. Remember that the flavors will intensify as the soup simmers, so go easy and adjust as needed.
- Depending on your preference, you can either leave the soup as is with chunky mushroom bits or use an immersion blender to create a smoother texture. The choice is yours!
- Add the reserved sliced mushroom once all the diced mushroom was gone and let it simmer.
- Add the heavy whipping cream and wait until the soup thicken slightly.
